I remember leaving the interview that day thinking OMG this guy is crazy. I immediately called Brian and my parents telling them about the interview and that no matter what I would not take the job. My good friend said it best "Everything crazy either happens to you or around you"

lately. Between work,
exercising every night and spending time with my family I don't have as much time to be on the computer.
On a positive note...today we had the home security system activated. There's nothing like the feeling of added security to help you sleep better at night.

1 can (15 ounces) black beans, rinsed and drained
1 cup frozen corn, thawed
1 green pepper, diced
1 sweet red pepper, diced
1 cup diced red onion
2 celery ribs, chopped
3/4 cup cubed Monterey Jack cheese
3 tablespoons lemon juice
3 tablespoons red wine vinegar
2 tablespoons olive oil
2 garlic cloves, minced
1 tablespoon Italian seasoning
1 teaspoon pepper
1/2 teaspoon ground cumin
In a large bowl, combine the beans, corn, peppers, onion, celery and cheese. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over vegetable mixture and toss gently to coat. Cover and chill for 2 hours or overnight.

I can honestly say that I love what I do. I am eager to learn the new things that come with my new role. I also have a wonderful boss with lots of experience who is a great leader and I look forward to learning many things from her.

* 1 package (10 ounces) refrigerated cheese tortellini
* 1 tablespoon olive oil
* 1 small zucchini, diced
* 1 yellow squash, diced
* 1 onions, diced
* 1 sweet red pepper, diced
* 1 teaspoon dried basil
* 1/2 teaspoon pepper
* 1/2 teaspoon salt
* 1 cup (4 ounces) shredded part-skim mozzarella cheese
* 1 cup half-and-half cream
* Cook tortellini according to package directions. Meanwhile, heat oil in a skillet; cook zucchini, squash, onion, red pepper and spices until vegetables are crisp-tender.
* Drain tortellini and rinse in hot water; combine with vegetable mixture, mozzarella and cream in a 1-1/2-qt. baking dish.
* Bake, uncovered, at 375° for 20 minutes or until heated through

4 lg. chicken breasts (boiled & cut into sm. pieces)
3 T. mayonnaise
1/2 med. onion (diced)
2 stalks celery (chopped)
8 oz. cream cheese
1 C. shredded cheddar cheese
2 pkgs. refrigerated biscuits
Combine all ingredients together, except the biscuits. Mix well.
Flatten out each biscuit to make a circle about twice the original size. Place 1 T. of chicken mixture in the center of the flattened out biscuit. Fold the sides together and seal to make a pocket.
Place pockets on a sprayed cookie sheet. Sprinkle tops of pockets with shredded cheddar cheese.
Bake at 350 degrees for 8 to 10 minutes.

I have my 15 year class reunion this summer and I have extra baby weight that has overstayed it's welcome so the treadmill and wii zumba have become my best friends the last two weeks. I haven't dreaded the workouts because I'm trying to focus on my goal...LOSE WEIGHT. Wish me luck!!
