Friday evening while watching the news I saw a story about a lawyer who had been murdered. As soon as they said the name it sounded familiar to me...then I saw the picture.

I remember leaving the interview that day thinking OMG this guy is crazy. I immediately called Brian and my parents telling them about the interview and that no matter what I would not take the job. My good friend said it best "Everything crazy either happens to you or around you"

On a positive note...today we had the home security system activated. There's nothing like the feeling of added security to help you sleep better at night.

Tasty Tuesday: Black Bean Fiesta Salad

BLACK BEAN FIESTA SALAD

Ingredients:
1 can (15 ounces) black beans, rinsed and drained
1 cup frozen corn, thawed
1 green pepper, diced
1 sweet red pepper, diced
1 cup diced red onion
2 celery ribs, chopped
3/4 cup cubed Monterey Jack cheese
3 tablespoons lemon juice
3 tablespoons red wine vinegar
2 tablespoons olive oil
2 garlic cloves, minced
1 tablespoon Italian seasoning
1 teaspoon pepper
1/2 teaspoon ground cumin

Directions:
In a large bowl, combine the beans, corn, peppers, onion, celery and cheese. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over vegetable mixture and toss gently to coat. Cover and chill for 2 hours or overnight.

You continue to amaze me daily with your caring and considerate ways. You have such a big heart and you radiate kindness to everyone you meet. I'm so thankful to have you in my life and I couldn't have wished for a more perfect person to spend my life with.

What makes me fall in love with you more each day is watching you with Addison. She is truly blessed to have such a wonderful Daddy. We love you!!

Thankful Thursday

I'm thankful for my recent promotion at work. It's my second promotion in the 6.5 years I've been at my current job. It's great to be recognized for all the hard work I do and for all the support from friends, family and co-workers. I'm also grateful to them for allowing me to work from home two days a week.

I can honestly say that I love what I do. I am eager to learn the new things that come with my new role. I also have a wonderful boss with lots of experience who is a great leader and I look forward to learning many things from her.

Tasty Tuesday: Tortellini Bake

Ingredients:

* 1 package (10 ounces) refrigerated cheese tortellini
* 1 tablespoon olive oil
* 1 small zucchini, diced
* 1 yellow squash, diced
* 1 onions, diced
* 1 sweet red pepper, diced
* 1 teaspoon dried basil
* 1/2 teaspoon pepper
* 1/2 teaspoon salt
* 1 cup (4 ounces) shredded part-skim mozzarella cheese
* 1 cup half-and-half cream

Directions:

* Cook tortellini according to package directions. Meanwhile, heat oil in a skillet; cook zucchini, squash, onion, red pepper and spices until vegetables are crisp-tender.

* Drain tortellini and rinse in hot water; combine with vegetable mixture, mozzarella and cream in a 1-1/2-qt. baking dish.

* Bake, uncovered, at 375° for 20 minutes or until heated through

Our Weekend

Brian is now in the busy season at his work and is working every Saturday so Saturday morning Addison and I ran errands and went to the park. Sunday we had a picnic lunch at the park and spent a relaxing day watching Addison play. She loves the park so much that she constantly says "Swing, Slide." If you ask her what she wants to do she'll repeat "Swing, Slide. I go Bye Bye" over and over and over.

Tasty Tuesday: Chicken in a Pocket

CHICKEN IN A POCKET

Ingredients:
4 lg. chicken breasts (boiled & cut into sm. pieces)
3 T. mayonnaise
1/2 med. onion (diced)
2 stalks celery (chopped)
8 oz. cream cheese
1 C. shredded cheddar cheese
2 pkgs. refrigerated biscuits

Directions:
Combine all ingredients together, except the biscuits. Mix well.

Flatten out each biscuit to make a circle about twice the original size. Place 1 T. of chicken mixture in the center of the flattened out biscuit. Fold the sides together and seal to make a pocket.

Place pockets on a sprayed cookie sheet. Sprinkle tops of pockets with shredded cheddar cheese.

Bake at 350 degrees for 8 to 10 minutes.

New Year's Resolution

So I'm going to be totally unoriginal with my New Year's resolution...lose weight. Of course I join the millions of others with the same goal in which you ambitiously attack at the beginning of the year only to lose sight within a few months but I'm going to really try hard this time.

I have my 15 year class reunion this summer and I have extra baby weight that has overstayed it's welcome so the treadmill and wii zumba have become my best friends the last two weeks. I haven't dreaded the workouts because I'm trying to focus on my goal...LOSE WEIGHT. Wish me luck!!
