Then we are headed to the salon to get our hair done...I LOVE having girly days with my Mom!!
And to top it off tonight I'm having a rare night out with friends and co-workers for dinner and drinks. We are also doing a White Elephant gift exchange.

1/4 c. Kraft Catalina Dressing (divided)
1 lb. boneless skinless chicken breasts (cut into bite-sized pieces)
1 1/2 c. water
1 (14.5 oz.) can chicken broth
2 T. soy sauce
1 T. creamy peanut butter
1/2 lb. uncooked spaghetti (broken into pieces)
2 c. broccoli florets
1 c. thinly-sliced carrots
Directions:
Heat 2 T. of the dressing in a large skillet on medium heat. Add chicken. Cook and stir for 5 min. or until cooked through. Add remaining dressing, water, chicken broth, soy sauce and peanut butter. Bring to a boil. Add spaghetti. Cover and reduce heat to medium-low. Simmer for 5 mintues.
Stir in broccoli and carrots. Cover and simmer for 4 to 6 minutes or until spaghetti is tender.
May substitute spaghetti with other kinds of noodles, such as egg noodles, rice noodles or angel hair pasta.
