Fun Day Planned

Since I'm trying to make the most of my two weeks off work I'm headed to the spa this morning with my Mom. I'm going to get an hour massage and Mom is getting a facial.

Then we are headed to the salon to get our hair done...I LOVE having girly days with my Mom!!

And to top it off tonight I'm having a rare night out with friends and co-workers for dinner and drinks. We are also doing a White Elephant gift exchange.

Addison's Christmas Dress

Mom and I found the cutest dress for Addison while out Christmas shopping on Monday. This adorable set comes with a dress for a doll too!! Addison was so excited that she put the dress on her doll right away...well for at least a half second because she likes to undress her dolls. We have a house full of naked dolls...lol.

Tasty Tuesday: Grandma's Peppernuts


GRANDMA'S PEPPERNUTS

Ingredients:
2 c. brown sugar
1/2 c. margarine
2 eggs
2 t. cinnamon
2 t. nutmeg
1 t. baking soda
1 t. almond flavor (optional)
3 c. flour

Directions:
Mix together the margarine and brown sugar. In another bowl, beat the eggs, nutmeg, cinnamon, baking soda and almond flavoring, if desired. Add this mixture to the brown sugar mixture. Add flour. Roll until pencil thick. Chill. Slice. Bake at 325 degrees for 10 min. or until brown.

Christmas Vacation Starts Today

Today is my last day of work until next year!! We are having a Secret Santa exchange at work today then everyone is going out to lunch. I'm thankful to have a couple weeks off and enjoy the holiday with family.

My parents will be here this weekend and I can't wait to see them. Yay for the holidays!!

Tasty Tuesday: Thai Peanut Chicken


THAI PEANUT CHICKEN

Ingredients:

1/4 c. Kraft Catalina Dressing (divided)
1 lb. boneless skinless chicken breasts (cut into bite-sized pieces)
1 1/2 c. water
1 (14.5 oz.) can chicken broth
2 T. soy sauce
1 T. creamy peanut butter
1/2 lb. uncooked spaghetti (broken into pieces)
2 c. broccoli florets
1 c. thinly-sliced carrots

Directions:

Heat 2 T. of the dressing in a large skillet on medium heat. Add chicken. Cook and stir for 5 min. or until cooked through. Add remaining dressing, water, chicken broth, soy sauce and peanut butter. Bring to a boil. Add spaghetti. Cover and reduce heat to medium-low. Simmer for 5 mintues.

Stir in broccoli and carrots. Cover and simmer for 4 to 6 minutes or until spaghetti is tender.

May substitute spaghetti with other kinds of noodles, such as egg noodles, rice noodles or angel hair pasta.

Saturday night we went to the Holiday Fest Christmas Parade. Addison was excited that Dean and Lyla came. She kept saying their names over and over. Lyla just turned one on Thursday and Addison loves to be a little mommy to her.
